Skillet Chicken and Gravy

A quick and easy skillet chicken and gravy!
ingredients
- 3 tablespoons unsalted butter
- 1 pound boneless and skinless chicken breasts or thighs, pounded thin or butterflied
- 1/2 cup onion, finely diced
- 3 cloves garlic, chopped
- 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)
- 1/2 teaspoon dried rosemary (or 1 teaspoon fresh rosemary)
- 1/2 teaspoon ground sage (or 1 teaspoon fresh sage)
- 3 tablespoons flour (gluten-free for gluten-free)
- 2 cups chicken broth (link)
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- salt and pepper to taste
directions
- Melt the butter in a large skillet over medium heat, add the chicken and cook until the chicken is golden brown on both sides and cooked through (165F), about 7-10 minutes per side, before setting aside.
- Add the onion and cook until tender, about 5 minutes.
- Add the garlic, thyme, rosemary, and sage and cook until fragrant, about a minute.
- Sprinkle in the flour, mix well and cook for a minute.
- Add the broth, onion powder, and garlic powder, mix, bring to a boil, reduce the heat and simmer until the gravy thickens, about 3 minutes.
- Season with salt and pepper to taste.
- Add the chicken and any juices and cook for 5 minutes.
Option: Use oil or bacon grease instead of butter.
Option: Start by cooking 4 strips of bacon, setting aside and using the bacon grease, instead of butter, to cook the onion, before returning the bacon to the gravy at the end.
Option: Add 8 ounces mushrooms, sliced, adding them with the onions.
Option: Add 1/3 cup heavy/whipping cream or sour cream to the gravy at the end.
Option: Add 1 teaspoon Worcestershire sauce!
Option: Add 1 teaspoon soy sauce!
Option: Add 1/4 cup parmesan, pecorino, asiago, etc., grated, at the end, letting it melt into the gravy.
