Greek Lemon Rice

A simple, fresh lemon-y rice with plenty of fresh herbs!

ingredients
  • 2 tablespoons olive oil
  • 1/2 cup onion, diced
  • 4 green onions, thinly sliced and divided (lights and greens)
  • 1 cup long grained rice
  • 3 cloves garlic cloves, minced/grated
  • 2 cups low sodium chicken broth (or vegetable broth)
  • 1/4 cup lemon juice (~1 lemon)
  • 2 teaspoons lemon zest
  • 1 teaspoon dried oregano
  • 2 tablespoons butter (optional)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1/4 cup feta, crumbled (optional)
directions
  1. Heat the oil in a medium saucepan over medium heat, add the onion and the lights of the green onions, and cook until tender, about 5-7 minutes.
  2. Add rice and garlic, mix well and cook for a minute.
  3. Add the broth, lemon juice, lemon zest, oregano, and butter, bring to a boil, reduce the heat to low, cover and let it cook for 20 minutes.
  4. Turn off the heat, mix in the parsley, dill, the greens of the green onions, and feta, and enjoy!

Note: You can use fresh or dried herbs as desired; add dried herbs before cooking the rice and fresh herbs after.
Option: Add 1 leek, thinly sliced!
