Greek Lemon Rice

A simple, fresh lemon-y rice with plenty of fresh herbs!
ingredients
- 2 tablespoons olive oil
- 1/2 cup onion, diced
- 4 green onions, thinly sliced and divided (lights and greens)
- 1 cup long grained rice
- 3 cloves garlic cloves, minced/grated
- 2 cups low sodium chicken broth (or vegetable broth)
- 1/4 cup lemon juice (~1 lemon)
- 2 teaspoons lemon zest
- 1 teaspoon dried oregano
- 2 tablespoons butter (optional)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1/4 cup feta, crumbled (optional)
directions
- Heat the oil in a medium saucepan over medium heat, add the onion and the lights of the green onions, and cook until tender, about 5-7 minutes.
- Add rice and garlic, mix well and cook for a minute.
- Add the broth, lemon juice, lemon zest, oregano, and butter, bring to a boil, reduce the heat to low, cover and let it cook for 20 minutes.
- Turn off the heat, mix in the parsley, dill, the greens of the green onions, and feta, and enjoy!
Note: You can use fresh or dried herbs as desired; add dried herbs before cooking the rice and fresh herbs after.
Option: Add 1 leek, thinly sliced!
